A delicious invitation to support culinary scholarships

Student chefs from the Colorado Mountain College Culinary Institute in Breckenridge, like these from last year, are preparing to delight diners with the expertise they’ve gained at CMC. “A Celebration of Haute Cuisine” on Feb. 12, 2019, at Keystone Ranch supports scholarships for the program and is a much-anticipated six-course tradition held each winter. A few seats are still available for when Colorado Mountain College Culinary Institute student chefs serve up “A Celebration of Haute Cuisine,” a delectable six-course dinner, at Keystone Ranch.

The annual fundraising event, which supports the institute’s culinary apprentice program at CMC Breckenridge, will be held at Keystone Ranch on Feb. 12.

Tickets are nearly gone for this popular dinner, where diners enjoy fabulous food, wine and cocktail pairings. Current students of the institute will prepare the evening’s fare under the direction of Kevin Clarke, CMC director of culinary education.

New this year, the culinary team is pairing each course with a non-alcoholic beverage option in addition to alcoholic beverage pairings. A local favorite, Angry James Brewing of Silverthorne, will sponsor one of the pairings with a special beer selection.

A sampling of this year’s menu features smoked Colorado trout with sturgeon caviar, Colorado lamb with fireplace beets, spinach with candied pecan, and black cherry opera cake.

The Keystone Culinary Dinner will begin at 6 p.m. on Feb. 12 at Keystone Ranch, 1437 County Road 150 in Keystone. Tickets are $200 each, with patron tickets for two at $500. Table sponsorships are $2,000 for eight tickets, and supporting sponsorships are $5,000, which includes 10 tickets plus a post-event private dinner for 10 guests prepared by Chef Clarke.
